My Spaghetti Getting Meaty

Here’s what you need:
Ingredients
- 1/4 c. freshly chopped basil
- 1/2 c. fresh bread crumbs
- 1 tbsp. unsalted butter
- 2 medium carrots - peeled and finely chopped
- 1 large rib of celery - finely chopped
- 1 c. chicken broth
- 1/2 tsp. freshly cracked black pepper
- 1 large egg - beaten
- 1 1/4 lbs. ground beef
- 1/4 c. olive (not virgin) oil
- 1 small onion - peeled and finely chopped
- 1/2 c. freshly grated Parmesan cheese plus more for garnish
- freshly chopped Italian parsley for garnish
- 2 lbs. plum tomatoes - cored, seeded and diced (or canned tomatoes, drained)
- 3/4 c. red wine
- 1 1/2 tsp. salt
- 1 lb. spaghetti noodles

To prepare the Sauce:
- Sautee the onions with butter and olive oil in a large stock pot over medium heat. Stir until the onion is caramelized. Add the carrots and celery; continue stirring intermittently until vegetables are softened.
- Gently add the wine and allow it alcohol content to evaporate completely. Put in the tomatoes after with broth or stock and add some salt and pepper to taste. Simmer for a least two hour until tomatoes are cooked and smoothly break up them using the back of a wooden spoon.
- Occasionally stir the sauce and ensure not dry out. Once consistency becomes thicker add more broth or stock until even consistency is achieved.
To prepare the Meatballs and Pasta:
- Smoothly process the meat, cheese, bread crumbs, egg with 2 tablespoon of water in the food processor, seasoned with salt and pepper to taste.
- Form the meat mixture into bite-sized balls using your hands.
- You can have the meat balls in deep fried, baked or steamed. Just ensure it is cooked or half cooked before adding them in the sauce.
- When adding the half cooked meatballs into the sauce, allow to cook for about 20 minutes. If meatballs were already cooked, just add them into the sauce and simmer for a bout 5 minutes to merge its flavor. Add more seasoning if needed.
- Prepare the pasta as you normally do
Prepare for plating, set the meatballs over the pasta and sauce and sprinkle on some parmesan and parsley. And alas, mouth-watering and delectable pasta is served.
